Rice Noodle & Red Bell Pepper Salad

A Bright & Refreshing Cold Noodle Salad Packed with Vegetables & Flavor, featuring BBFK Food’s Butternut Ginger Sauce.

A Bright & Refreshing Cold Noodle Salad Packed with Vegetables & Flavor, featuring BBFK Food’s Butternut Ginger Sauce.

Ingredients -

  • Rice Noodles of Choice, Cooked and Cooled

  • 1 Red Bell Pepper, Cut into Rings

  • 1 Red Bell Pepper, Diced

  • 1 Carrot, Peeled & Sliced

  • 1/2 Fresh Daikon Radish, Sliced

  • 2 Red or Candy Stripe Radish, Sliced

  • 1/2 Cucumber, Sliced

  • 1 Fresh Avocado, Diced

  • Handful of Spinach (Optional)

  • Butternut Ginger Sauce, To Taste

  • Salt & Fresh Cracked Pepper, To Taste

  • Microgreens for Garnish (Optional)

Method of Preparation -

  1. Prepare all vegetables separately.

  2. Combine diced bell peppers, carrot, cucumber, and radishes in bowl.

  3. Sprinkle salt and cracked pepper.

  4. Shake Butternut Ginger bottle. Place two fingers over the top of the bottle and drizzle sauce over salad to control sauce pour.

  5. Toss vegetables with sauce. Add avocado and lightly toss vegetables to not bruise avocado.

  6. Taste and adjust seasoning and sauce to your liking.

  7. Place one bell pepper ring on plate. Add vegetable mix in bell pepper ring.

  8. Top vegetables with rice noodles, and drizzle Butternut Ginger sauce over noodles.

  9. For more height, add another bell pepper ring and top with remaining vegetables and rice noodles. Drizzle Butternut Ginger sauce over top layer.

  10. Top with microgreens.

  11. Enjoy!

Extra Notes -

If the Butternut Ginger isn’t your preferred sauce, we recommend substituting with the Avocado Goddess sauce for a basil & herb forward flavor, or the Chickpea Ranch sauce to add a refreshing taste of dill, lemon, and herb to this revamped classic salad!
