Three Bean Salad

Ingredients -

  • 1 cup Black Beans, Cooked & Drained

  • 1 cup Kidney Beans, Cooked & Drained

  • 1 cup Black Eyed Peas, Cooked & Drained

  • 1 cup Corn, Fresh

  • 2 Fresh Avocadoes, Cubed

  • 1/2 cup Red Onion, Medium Diced

  • Avocado Goddess Sauce, To Taste

  • Salt & Fresh Cracked Pepper, To Taste

  • Microgreens for Garnish (Optional)

Method of Preparation -

  1. Combine beans, corn, red onion, and salt and pepper in large mixing bowl

  2. Shake Avocado Goddess bottle. Place two fingers over the top of bottle and slowly pour sauce over mixture

  3. Mix with a large spoon so sauce coats mixture.

  4. Add fresh avocado and lightly toss salad so avocadoes don’t become bruised.

  5. Taste mixture; add more sauce, salt, or pepper if desired.

  6. Top with microgreens, or top wrap or protein with mixture.

  7. Enjoy!

Extra Notes -

Combining different types of legumes and vegetables helps create the complete protein needed for healthy diets without animal proteins or byproducts. The addition of avocado adds healthy fats and more fiber to an already fiber-rich dish, and the Avocado Goddess sauce brightens up this plate with a note of bright, herby, and sweet flavors to balance the earthiness of the legumes and vegetables. Easy additions to bulk up this recipe would be sweet or spicy peppers, squash, or ancient grains like quinoa or amaranth for a complete meal in one bowl.
